Been a long time since I've updated but it's hard to keep up with life! Since fall Dong and I went on a cruise and most recently I went on a weekend Vermont trip with my girls and spent Christmastime in NYC. And I got a nice sparkly Christmas gift as well...

The new year is coming, and with it comes a few resolutions. I'm not a big fan of resolutions because I have the world's worst willpower, but it doesn't hurt to think about some things I'd like to work on.

1. Take a picture every day - 365 photo project! If I can do this I'll put it on my blog too.
2. Work out at least 30 min a week - this is a tiny goal which I'm hoping I'll increase!
3. Pass the compounding exam!!! - no explanation needed.

Only 3 for now! The less I have, the less I can break =D

Now back to studying...

Green Tea Mousse Cake

Light and fluffy green tea mousse cake, with a mild green tea taste and a pretty pale green color! Alternating layers of green tea-flavored sponge cake and mousse make up this cake. I adapted this recipe from Yochana's Cake Delight, which was originally written in metric units and then roughly converted to US cooking units by me. I think it turned out pretty well, and people seemed to like it.

Green Tea Mousse Cake
Green Tea Sponge Cake
4 egg yolks to be mixed with  1/2 cup confectioner's sugar
4 egg whites (room temp if possible) to be mixed with 1/2 cup confectioner's sugar
30 ml or 1 oz water
50 ml or 2 oz vegetable oil
1 cup cake flour
1 tsp green tea powder

Green Tea Mousse Filling:
4 egg yolks
3/4 cup confectioner's sugar
3/4 cup milk
2 tsp green tea powder
1 1/3 cup heavy whipping cream
10 gm. gelatine powder + 45 ml. or 1/6 cup water (soak together then microwave for about 30 secs.)

Method:
Sponge Cake:
(1) Mix egg yolks,  1/2 cup sugar, water and oil together and stir till mixture is smooth.
(2) Add in flour and green tea powder and mix evenly.
(3) Whisk egg white with sugar till stiff peak (may take a while! I read that having the egg whites at room temperature helps). Fold in egg yolk mixture and pour mixture into a 9" springform cake pan.
(4) Bake at 350 F for about 30 mins, or until skewer inserted comes out clean.
(5) Leave cake to cool on wire rack and slice cake in half lengthwise into 2 slices. Place 1 slice of cake into a 9" springform cake pan.


Mousse:
(1) Heat milk till warm (not boiling). Remove from heat and transfer to mixing bowl, then add in sugar and green tea powder. Stir till evenly mixed. Add egg yolks and whisk quickly. Be careful not to allow the egg yolk to overcook or it will become lumpy.
(2) Add in melted gelatine mixture and leave to cool.
(3) Make whipped cream - pour whipping cream into mixing bowl and use hand mixer to whip for about 10-15 minutes until soft peaks form. You could technically do this by hand but I imagine your hand would fall off first. Fold in whipped cream into the milk/yolk mixture - this is the mousse filling.
(4) Pour half of the mousse filling onto the prepared cake ring and then top up with the other slice of green tea sponge cake.
(5) Pour the rest of the mousse on top and level it evenly. Refrigerate till mousse is set.
(6) Take out the cake from the cake ring and sieve green tea powder on top and decorate as desired.

Happy Mid-Autumn Festival!

So, I kinda lied during the last post - it wasn't really the beginning of autumn until yesterday! Although it really felt fall-like in terms of weather at that time... then again, today in Syracuse it was sunny and 80. So who's to say what fall weather is anyways?

In honor of mid-autumn festival, I'll put up some asian-ish pics I've taken. I don't know much about the festival, but I know it takes place in the fall on the day of the autumnal equinox with the full moon, and you eat mooncakes and drink tea. I'm sure there's a lot more to it but I don't think I was ever told! Oh wells, maybe time to wiki it.

it's autumn!

Theme change for the changing seasons!

It's scary how time can pass in a blink. Already it's the middle of September, and I remember just a few weeks ago I was surprised that Sept was beginning! Soon another year will pass by and I'll have to do some reflection... and some budgeting, darn it. My grace period for my loans ends in December! And then I'll have to start studying for the compounding exam again... ugh! At least this year the compounding exam will have digital scales, so we won't need to adjust the torsion balances and zero them and stuff. And taring should be pretty damn easy too!

Just last week my good friend Kaitlin got married to her high school sweetheart Ryan. It was a lovely wedding with a great reception afterwards, complete with a wishing well made by the groom's dad! And there was dancing, all the classic wedding hits like the electric slide, twist and shout, etc etc, with some dancey songs thrown in there at the end of the night. It was just terrific to see Kaitlin so happy - she was glowing, like all those cliches say. Ryan was pretty shiny himself!

It was also great to see all my pharmacy buddies again, and it makes me sad that I can't really be so close to them, or my friends from high school, or junior high school. I'm pretty far removed from everyone now, and I can only hope that we won't forget each other as time goes by.

In a week or so I'll have a pretty big status change myself... it's interesting what life (or pushy parents) will do to you.

oh how time flies...

... when you're working! It's surprising but it's already been a month that we've been in Syracuse. Even though I'm not licensed as a pharmacist yet, I'm still working as a graduate intern, with decidedly easier hours and less stressful commute times than Dong. Of course, it also means I only get half the pay... but on the bright side, I get taxed less! =D

Besides work, there's been some background stuff going on - going out to eat, exploring the Erie Canal Park, checking out the Carousel Center, and the Great New York State Fair. Lots of pictures, and maybe some restaurant reviews to come! For the most part, life has settled into a bit of a rhythm, pleasantly broken up by visiting friends. Last week I got to see my beloved Teresa again, and this weekend I'll see my buddy Jenn Lai, among others! Nothing like a full house to remind you how much you liked an empty one!

Restaurant Review: The Mission

To celebrate Dong's first day on the job as a licensed pharmacist, we checked out The Mission for dinner (of course he was paying, tee hee!) The Mission serves what they call "Pan-American" cuisine - a tasty mixture of Mexican, South American and Southwestern cuisines. It's also charmingly located inside an old red church, complete with ivy crawling up one side.





Inside, the main dining area is illuminated by hanging lights and gorgeous stained glass windows. A bar lines one side of the room, with the stained glass windows adding great effect. Wooden beams overhead add a rustic appeal, and you can see the kitchen through a window in the back. The back of the restaurant is dominated by a clay facade, like you'd see on a Mexican church. It's a pretty dramatic and cool effect, and really gets you ready to enjoy some delicious food!






Their dinner menu changes with the season, so I wasn't able to try out the scallops that I remember Shirley raving about a few weeks ago (wahhh!). However, there were plenty of other offerings to choose from. For our appetizer, we ordered the tostada, my entree was the puerco, pork tenderloin with mango salsa, and Dong ordered two soft tacos with pulled pork and chicken.

First up was the tostada, consisting of pan-seared tuna (on the bottom), with avocado sandwiched between crispy corn tortillas and salsa on top, drizzled with some delicious sauce that I can't remember the name of. It was so good... crispy, flavorful, and the tuna was moist and flavorful. Gone in sixty seconds!


My entree, the puerco, was pork tenderloin topped with mango salsa, with a side of warm greens and some mushy stuff that I didn't really like. The pork was okay... it was a little bland, but the mango salsa helped it some. In actuality, my favorite part of the dish were the greens, which was mixed with rhubarb. They were slightly bitter, helping to offset the sweetness of the mango. And lastly, there is that unidentified mush beneath the pork... I think my dislike of it stems from my distaste of mushy foods. I'm fine with mashed potatoes, which has a firmish consistency, but this was kinda weirdly runny in my mouth, with bits of chewy something. It didn't taste that bad, but the consistency really turned me off... Thankfully, Dong finished it off.



And last but not least, Dong's soft shell tacos! In the picture you can see his hands, all clenched up and ready to devour! In the words of Dong, they were "very good". They gave us pretty generous portions, since by the end of it we barely managed to clean our plates. Then again, we did have generous portions of the nachos and salsa that they set out before the food came... As a forewarning, they do charge for extra salsa for the chips. Just so ya know.

All in all, it was a pretty satisfying meal, and we were happy stuffed little campers when we left!

oh lately it's so quiet

So it's been about a week since we've moved to Camillus and after the mad chaos of the first few days with unpacking and building furniture, the place is starting to take shape. Sure, there are still random boxes around and I wonder if we'll ever finish unpacking all our books, but overall it's pretty livable. We finally finally finally got our Verizon Fios installed yesterday for internet and TV so I'm not spending all my time playing Fable II! Which is a pretty cool game and quite addictive. Dong got pretty frustrated at me monopolizing our nice new TV.

But now that we have things pretty set up, it's been so quiet... I need to start working again, make some money and offset the gluttonous spending of the past few weeks. Which reminds me, I need to pay my massive credit card bill... Ugh.

Speaking of working, today is Dong's first day of work as a licensed pharmacist! I'm excited for him and I'm sure he'll be fine, but it will be a while til I'll get my license... I'll be taking my compounding exam again in January, so hope that everything will work out and I'll be licensed by Feb perhaps! In a way it's a little relieving that I'm not yet a licensed pharmacist with major responsibilities, I feel like I have a little more time to whip myself into shape. But it's also kind of sad to be left behind while all your friends and peers have moved on to this next stage of their career (and salary, darnit!

Back to Basics

This past weekend was the much-anticipated Cornell Reunion, set up over months and through hundreds of emails in a lovely email chain entitled "let's start planning a summer get together, shall we?" My little heart would go pitter-patter when I saw new emails in the thread. Ahhh...

One game we never played is Twister. I dun understand the social connotations of that. Do you only play with ppl you want to sleep with? If that's the case, I think it would be fun for the guys.
 As evidenced, Bing wins for most memorable emails/jacking! But on to the actual trip itself.... some one word descriptions:

    Feed the Fishies!

    First post in a new blog!

    Things sure have changed since the days of Xanga... remember when that was big in HS? Looking back at my xanga, it was last updated in '06 when I first started pharmacy school - and now I've graduated! Can't believe that four years have already passed by... It was a great four years, filled with friends and good memories! I loved being in school and having no real responsibilities. But now it's time to go into the "real world", with limited vacation, utility bills, the hassle of assembling your own furniture, and the potential to get sued. Ugh.

    Yesterday Dong and I moved  most of our stuff into our new apartment near Syracuse! It was a hot sweaty mess, and not the fun kind, but the crappy kind full of lugging furniture and moving boxes and putting together furniture. If Will and Jason didn't help us out we would have been SCREWED! We didn't get back til 1 AM... but that's for another post.

    Note to self: buy a power drill!!!!

    Next up is Ithaca reunion with my Cornellians =D  Looking forward to the weekend, even if it's rainy!
